Serves: 2 adults Preparation Time: 10mins Meal Type: Breakfast, Snack or Dessert Ingredients: 1/2 cup of cooked rice or rice flakes1/4 cup almond meal 2 TBSP chia seeds (sourced from Australia) 1/2 -3/4 cup Almond milk and/or water Raisins and goji berries (or dried apricots, sulfur-free) |
Optional Extras: Adding these extras make it more creamy and sweet like a rice pudding: 1 egg yolk, organic, free-range 1 tsp vanilla extract 1/2 tsp maple syrup or honey These optional extras are to be added once the porridge is cooked and taken off the heat. When adding the egg yolk keep stirring until it is all mixed in otherwise the egg yolk will cook and clump. |
Cooking Instructions: Into a small saucepan add the rice flakes, almond meal, chia seeds and 1/2 cup of almond milk and mix well. On a moderate heat keep stirring the porridge until cooked which takes about 3-5minutes. While cooking, add more water or almond milk as needed to stop the porridge from sticking to the pan but not too much as the porridge can get too sloppy. When cooked remove from heat and add the optional extras. Then serve into a bowl and sprinkle with the raisins and goji berries. Add more almond milk if needed and a drizzle of maple syrup. |
